We know everything there is to know about raw bean paste, and that gives us great freedom.
Our story began in 1924 in a private house near Ōkaidō in Matsuyama. Our artisans stayed up all night stirring the pots until their hands were the size and color of baseball gloves, went out on deliveries after breakfast, after which they came back, prepared everything for the next day and went home after a communal lunch. This is how the company operated until just a few years ago.
We have changed our production methods in line with the times, but bean paste remains confined to the same niche. We faced a dilemma;even though our raw bean paste has many uses, for all these years it has not been able to transcend these boundaries.
Coming up to our centenary, we have launched an'pâtisserie 七日 nanoka as we feel this is the right time to take on a new challenge. Our intention is to spread the word about the appeal of innovative and original bean paste creations by looking back on our rich experience and establishing what people will see as the ideal bean paste shop.
